Poutine Galvaude

...Now, with more confit!


Awhile ago, I made poutine with sweet potatoes and veal demi glace gravy. Oh, man, was it ever a delight. A bit more recently, my good buddy Marc at the stellar (yet erroneously-named) No Recipes made it also, but one-upped me by photographing it like a genius (seriously, steam shot and everything). When I noticed the linkback in my Sitemeter readings, I took a look at my old post from last November and remembered that I'd threatened to make this with turkey leg confit leftover from Thanksgiving. Of course, I totally forgot to do that, and hi. Here we are.

Technically, this probably can't be called "galvaude" because I used duck instead of turkey or chicken, and I omitted the peas (some asshole is also probably gonna swing his/her peen around about this not really being poutine, either, since I used sweet potatoes instead of regular potatoes), but honestly, who gives a shit? It's French fries with gravy and cheese curds. It has duck confit on top. SUCK IT. And after I confited the duck, I oven-roasted the fries in the hot duck fat. I used sweet potato again because they really are just more nutritious and tasty, but I have to admit that they have a hard time holding their shape after they've been essentially poached in duck fat. Next time I'll fry them on the stove top to get the proper crispness. Beef demi gravy and local white cheddar curds, and we're laughing.

If anyone has noticed or cares, I've been lagging on the blogging in a big way. I just can't pretend to care that much right now, but it's not you, I swear. I just am such a dipshit these days. It's strange what hormones do to the female brain, but each time I do cook, I forget to shoot it. For fuck's sake, I made mac and cheese with brie last weekend and forgot to photograph it. I have a couple things lined up, but who knows when I'll get around to it. I'll try to at least be present when I can, but I just have a lot of other shit going on right now, and ice cream makes a fine dinner.

All I can think of is that the baby is gonna come out saying "SUCK IT"...that and I've really missed your posts and laughing at them!

I suppose I can forgive you, but MAC N CHEE with BRIE!?!?! And no photos. I think I'm gonna cry.

As always, your poutine causes me to drool all over the place and make a big mess.

People can SUCK IT if they have a problem - IT HAS DUCK CONFIT for christs sake - that automagically makes it awesome.

Course, the dish looks great. Potatoes cooked in duck fat? sign me up!

You have won my heart anew, you know. Being a chubby Canadian girl, the merest mention of poutine and my pupils start to dilate. We just got a better quality fast food joint down in the club district of Toronto called The Poutinerie, where their bread and butter (or potatoes and gravy, as it were) lies in a plethora of poutine choices. However, now I'm going to go send them an angry letter demanding that they scrap the prosciutto and bring in some confit instead. Ohhh....I popped a button just thinking about it.

Alicia - It's like Thanksgiving in a bowl. :)

Amy - What is it with stickler finger-waggers anyway? They need to eat more gravy.

Mags! - It's really easy, you basically just smell wonderful smells for a few hours while the oven does the work.

El Greco - It's kind of like a hamburger - a wonderful canvas for delicious things.

Man oh man, pregnancy hormones made me forget everything - if it's just food photos for you, then you're doing awesome!

I'm sorry, all I could think about for a brief moment there was oven roasting the sweet potatoes in hot duck fat. Drool.

Normally, I'd forgive you for not photographing and posting your recipes, but you had to go and say, "mac and cheese with brie". That sounded so (insert expletive here) delicious that I am heartbroken I won't be reading about it.

This looks....i can't even say. Meat. Gravy. Sweet potatoes. How can that not go right. Even when doing comfort food, you're on the mark. Your child is gonna have an embarrasment of riches food-wise.

Poutine is my second snack of choice next to a can of dolmades:D With sweet potatoes it may even be healthy for me even with all the gravy and curd:D So goood...

Oh, And I was beginning to think it was just me. But honestly just say poutine over and over again. Maybe you have to be a guy or lesbian to get this. But it does taste as good as it sounds. Even with duck.

We all envy the well fed spawn.

i just can't keep up with the hoity toitiness here and at no recipes. even claudia is hoity toity, with the throwing the bottarga around like she's TPing someone's house.

that being said, you need to have the baby, teach it to make this, and then send it to stay with aunt thursday night smackdown for a weekend.
