Broccoli rabe, potato and ham frittata

I am losing my fucking mind in all this snow. We were able to drive through it on Saturday night, when it was just a few inches, but yesterday chains officially became required on all roads and the highways are closed. I don't have chains, and I can't go get any, either. We're trapped in our 2-foot drifts, with only our cupboards and fridge to sustain us, and there's nothing we can do about. Well, I guess I could shuffle through all that snow to the grocery store (a half mile away), but come on. Shuffling through snow is for suckers.

Anyway, I was frantically tearing through the fridge to find something to make for breakfast, and I found some eggs, broccoli rabe, ham, and a squidge of buffalo mozz. I sauteed a diced potato and some minced shallot, then dumped in the chopped ham and broccoli rabe (perfectly green-bitter, with lovely, cruciferous horseradish notes on the upper palate). I let it cook for a second to brighten up the greens, and then dumped in 4 (salted and peppered) beaten eggs and topped it with torn-up blobs of mozz. Into the oven for about 15 minutes. With good grainy wheat toast, it's a perfect breakfast. With a salad, it'd be a nice lunch or light supper.

Thanks to this lovely frittata, we're out of eggs now. We're out of a lot of things, come to think of it. No eggs. No milk. No flour. I can't make biscuits, or cornbread, or cookies, or anything of any value to a snowed-in person. Shit, I might end up walking a mile in the snow today.

So after your taternachos and chicken & waffles, this looks all healthy and stuff......but delcious nonetheless. Sorry you're drowning in snow....but snow is an excuse to eat gloppy, baked stuff so I'll check back often:)!

Fucking snow. I'm so tired of it and I've only been in town since Friday. We're at at least two feet in the burbs. And grocery store 1.5 miles away. And then the electricity went out. Bah humbug. I do think baking is the answer.

you and i are on some sort of extra stellar food parallel. my shift away from dinner excitement has shifted to an increased focus on creating hangover worthy weekend breakfasts. only you seem to be documenting them and i am too lazy (or hungover) to snap actual pictures. carry on.

My neighbors were laughing at me because I put chains on my car on Saturday, just in case.

But guess who's laughing now?? ;-)

And since I'm such a wonderful person, I drove my neighbor to the store so she could feed her 3 kids.

You're just going to have to suck it up and walk. It really isn't so bad. Or you can put on your cross country skis. I've seen lots of people doing that.

It's supposed to warm up in the next day or so, if that makes you feel better.

I'm hitting the bottom of a bottle of merlot, and broccoli "rape" made me LOL. And I'm drunk enough to admit it.

I could eat the shit out of that fritatta right now.

Abu Dhabi - The hangover food I made yesterday (mushroom-ginger broth with somen) put this to shame, but the hangover wasn't mine.

Darlene - I did end up hiking to the store, and it was kinda fun! And now I have cornbread and cocktails to thank me for it.

Syd - I can smell it on you from here, ya lush.

Or, you could board a plane from the land of Nike to... The land that eats up all the Nike ;) We could watch my sitcoms on DVD and I'll bake while you cook. Unforch (yeah, I just made it up now, it is SO catching on) there's no broccoli rabe here (and it'll take a little trip to get some buffalo mozzarella), but I'm sure you'll make something equally as magical with what we have here!

The snow doesn't usually stay this long does it? The city has probably already used their yearly budget alloted for snow removal and it has only just begun. When I was a kid I hoped for a white Christmas so this is what the kids dreams are made of. I hope you have a wonderful holiday with family and friends!!!Merry Christmas to the kid in all of us!!!
