Bacon-Grilled Cheese Egg-in-the-Hole

Less may be more, but so is more. I thought it would be a great idea to make a egg-in-the-hole for breakfast awhile ago, but instead of the usual toast with an egg fried into the middle of it, why not use a grilled cheese sammich? With bacon in it? Why the fuck not.

I made a coupla grilled cheese sandwiches (with Provolone and crispy bacon), punched a hole in the center and cracked an egg into it. I nibbled the cookie-cutter mini-sammies while I nervously paced back and forth, worrying that I'd over-toast the sandwich waiting for the egg to cook, then flipped it gingerly. Perfection. Though delicious, next time, I'll add a little something to brighten it up - tomato slices? Slivers of sweet onion?

Serve with The Believer and a fiery Bloody Mary.


(Note: thank you to this sassy bitch who corrected my original title, a misuse of toad-in-the-hole. Toad-in-the-hole is bangers in Yorkshire pudding, not an egg in toast. It was cool of her to call me out - it's how I learn!)

OMG Heather, this is the only thing that my husband inherited from his father, and then he passed this to my son. He made it exactly the way you made it, sans bacon (he's Jewish, what can I say) My son and I though, will always put bacon if there is one in my fridge. Yumm Heather, Yum!

Totally awesome! My grandmother always called the egg-in-toast a Toad in the Hole too, but I keep seeing all these conflicting claims about what it really means. To my sister, and I though, it will always be the real deal! (And this takes it that ever-so-important step further!)

In Argentina you can add an egg to just about anything and call it "completo", so I declare this sandwich grilled chee completo.

How about add a slather of pesto for the brightening? It always works for the grilled cheese/tomato soup combo.

Of course you could always do the tomatoes, add a side of baked beans, and a few sausages and come pretty close to the 'full English'.

Toad in the hole can also refer to this dish - it is not just the batter pudding with sausages. This is amazing and delicious and I think needs a slightly sweet tomato relish on the side.

1) Never heard of toad or egg in a hole. We call these hobo sandwiches (sammiches since I've started reading here).

2) I haven't had bacon in the house for over a year because I loathe the clean-up. Got any hints?

Heather, Don't let anyone tell you otherwise: in the US this is too a fucking toad in the hole. I think it must be position number 46 too. And please don't ever stop cursing. As for the dish, it is singularly inspired as usual - witness the effluvia of comments!

I just happened to buy some quail eggs this morning, and I think I shall riff on your invention. It has happened before. Stop and think of it. An Acme sourdough, with a nice emmenthaler, bits of bacon and tiny holes cut out with a little shot glass maybe and a quail egg plopped in each. Tadpoles in holes. Or something to that effect. Thanks! Ken
